Shiitake mushrooms are a good source of copper to maintain a healthy nervous system, vitamin B5, manganese, niacin, riboflavin They also provide vitamin D, calcium, phosphorus, potassium, & vitamin C. To rehydrate, before use, place the mushrooms in hot to boiling water for at least 20 minutes (the bowl can also be covered to speed up the process).
